When I leave my cursor on an Email in my Outlook Inbox, it automatically
opens after a few seconds. How can I turn this "feature" off?

I think you mean that it is Marked As Read (not "opened")

Here's the setting location:

Tools | options | Other | Reading Pane Settings. Now choose how and when
the emails are marked as Read when you view them in the Reading Pane.

No, I mean it actually opens the Email. This occurs when I leave the cursor
in the subject area of my Inbox, or other folders, While I am looking through
the subjects to see which Email I want to open, the Email that the cursor is
on opens. Very frustrating.

Perhaps you have the "X-Mouse" (i.e., activation follows mouse) setting
enabled. Do you have TweakUI installed? If so, it's an option there.

No it doesn't open a form. I am using a single click to open but I am not
clicking when this occurs. The cursor is just sitting over an email as I
look over the Emails and try and ecide which to open or if I am distracted by
phone call etc.

I can't replicate what you are describing and have never seen it before. So
it's either really unusual or I don't understand your explanation.
